Well, it was all going quite nicely until the novel coronavirus. WhiskyBack beers are draught only, and my beers were sold in the now mostly shuttered bars and restaurants of Portland, Oregon. So WhiskyBack Brewing is taking a rest until the world gets back to some kind of normal. I do want to thank the bartenders, owners and staff of the great gathering places that carried my beers, and wish them safety and health in the months ahead. WhiskyBack, conceived by whisky and craft beer expert, Stuart MacLean Ramsay, is a family of beers designed to pair with and enhance straight whiskies. Although taking their inspiration from the world of whisky, WhiskyBacks are also intended to be enjoyed as stand-alone beers.
We are seeking balance and compatibility between the whisky and the beer, and balance within the individual beer. Each WhiskyBack has a foundation in classic beers and beer styles, enhanced by the ingredients, history and landscape of the spirit. They are versatile enough to enjoy as session beers and pair well with food, especially the food cultures from the whisky producing regions.
WhiskyBack Scottish Red Ale is a malty & fruity companion for whiskies built around barley, the king of grains: single malt Scotch, Irish, Japanese and many American craft whiskies. WhiskyBack Bluegrass Pilsner is a crisp and clean Bohemian Pilsner and is brewed to complement American oak infused Bourbon and Rye. WhiskyBack Frisky Porter tackles and wrestles with the big, smoky drams from Islay and complex whiskies that employ liberal doses of peat reek. Chupacabra! is based on a Helles Lager, with infused chilis and hops that empasize lime and orange citrus. WhiskyBack Chupacabra! pairs with tequila and mezcal. And WhiskyBack Everything's Nutz is our Autumn beer, a brown ale with a hint of filberts, designed, like the Scottish Red as an all-rounder for the entire whisky family.
All were created for the serious two-handed drinker to experience that perfect moment of cerebral bliss.
