Chupacabra! is named for the legendary Hispanic creature that attacks and drinks the blood of livestock, with a predeliction for goats. (Chupar: to suck; Cabra: goat)
We designed Chupacabra! to pair with Tequila and Mezcal, and built it around a classic Bavarian Helles Lager, imbued with the elements of Sangrita ("little blood"), the traditional accompaniment to Tequila enjoyed by Tapatíos, the citizens of Guadalajara in the state of Jalisco, Mexico.
We brew our Helles Lager, a clean, crisp German beer, and infuse it with Valencia oranges, limes and toasted árbol chili's. To enhance the sangrita experience, Estuardito "El Baileador" Ramsay, has created a salt rim mix called "Jefe de Jefes", fusing sea salt, pineapple, pomegranite and a teasing conflagration of chipotle, árbol and pequin chili's. Each keg of Chupacabra! comes with this customized rim. We ask that bartenders rim the beer glass with a lime wedge aforehand to complete the Chupacabra! experience.
In addition to the atypical subtle & spicy hop flavor of a Bavarian Helles, our finishing/flavoring hops, Wakatu, are from New Zealand, gifting a citrus lime aroma to the beer.
(Wakatu hops are grown in Nelson, New Zealand; the name is derived from Whakatu, the native Maori name for Nelson, and are derived from female Hallertauer Mittlelfruh pollinated with the male of a New Zealand hop variety)

Everything's Nutz Brown Ale
WhiskyBack's Fall beer is built around classic North of England Brown and Nut Brown Ales, perfect for Autumnal stimulation and liquid journeys. Malty, nutty and quite rich, Everything's Nutz Brown Ale is medium bodied, balance and eminently sessionable.
The mashbill base is Marris Otter, a heritage British malt packed with nutty, toasted and malt flavors. There's Scottish Cara malt for deep brown color, flaked oats for creamy mouthfeel and rye for a bit of spicy fruit and dryness to balance the malt sweetness. The hops are Columbus and Czech Saaz. And as a tribute to Oregon's Fall bounty, there's a wee dose of filberts in every batch.
Being a WhiskyBack, Everything's Nutz Brown Ale is designed to pair with certain whiskies, in addition to being a stand alone beer. Oats and rye were historically added to many Scotch and Irish whiskies, so they give distant memories to the drinking experience. The balance of the beer, the malt and nut character, make it a versatile pairing for most whiskies from the Old and the New World, but canny research and experimentation suggests medium peated malts such as Highland Park, Benromach, Kilchoman and Talisker. It's also a grand enhancement to the sturdier blends: Great King Street, Power's and Cutty Sark Prohibition. And not too shabby with a nice Rye Whisky.
Everything's Nutz was created during Trumpian times and inspired the name. WhiskyBack Brewing is asking bars and restaurants that serve this discounted beer to commit to donating a portion of sales to a non-profit or charity of their choice.
The Pictish Beastie
